Cheesy Eggplant Patties

Eggplant season leaves some of us wondering what to do with these crazy purple vegetables. Never fear, our cheesy eggplant patties can make even “the-eggplant-dubious” salivate and ask for seconds. Eggplant, much like tofu, is a fantastic vehicle for other flavors. The onion, garlic, parsley, and cheddar in this dish sing with savory delight. These patties can easily be adapted to gluten-free, grain-free, or vegan needs. You can also try different combinations of hard cheeses and fresh herbs. Whether you’re an eggplant-lover or not, these flavorful patties are definitely worth a try!

Serves: 4 as a side or 2-3 as an entree

  • 1 large eggplant, peeled and diced (about 4 c, diced)
  • 2 TBSP olive oil, divided (up to 1 TBSP more if cooking in batches)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 c grated sharp cheddar (or vegan cheese)
  • 2 TBSP chopped fresh parsley (plus more for garnish)
  • 1 tsp sea salt
  • ¼ tsp black pepper
  • 1 c breadcrumbs or almond meal, approximately
  1. Heat 1 TBSP olive oil in large skillet over medium heat. Add onion, salt. Sauté 5 mins until translucent. Add garlic, sauté 1 min more, until fragrant.
  2. Add eggplant cubes and sauté, stirring occasionally, until browned and soft, 10-12 minutes.
  3. Transfer mixture to a large bowl, cool, then purée/mash. Rinse and wipe out skillet to use again later.
  4. Stir in cheese, parsley, black pepper until well combined.
  5. Stir in breadcrumbs ¼ cup at a time until mixture reaches a firm consistency and holds together as patties.
  6. If using almond meal as breadcrumbs, transfer mixture to the refrigerator for 20 minutes to allow the almond meal to absorb some of the moisture.
  7. With dampened hands form 8 medium size patties (or 4 larger ones).
  8. Heat the remaining tablespoon of olive oil in the skillet over medium heat.
  9. When sizzling, add patties, cook 4 mins on each side or until browned.
  10. Serve warm with a parsley garnish and some optional marinara sauce on the side.
