Homemade Vinegar Based Dressing

Autumn has officially begun this week and with it comes more leafy greens from Crabtree Farms. As CSA boxes and market bags fill with more lettuces, we want to share some simple yet tasty vinegar based dressings to top these delightfully crunchy leaves. While extra virgin olive oil whisked with your favorite vinegar and a dash of salt and pepper makes for a fantastic and quick dressing all on their own, the addition of some simple ingredients adds a more robust flavor profile at a fraction of the cost of store-bought salad dressings. An added bonus is the knowledge that you’re feeding your guests and family tasty vinaigrette options made without the preservatives found in many store bought versions.

Ingredients
  • Apple Cider Vinegar Salad Dressing: 1/3 c. extra virgin olive oil
  • Apple Cider Vinegar Salad Dressing: 1/4 c. apple cider vinegar
  • Apple Cider Vinegar Salad Dressing: 1 TBSP Dijon mustard
  • Apple Cider Vinegar Salad Dressing: 1 TBSP honey
  • Apple Cider Vinegar Salad Dressing: 1 garlic clove, finely minced (optional)
  • Apple Cider Vinegar Salad Dressing: 1/2 tsp sea salt
  • Apple Cider Vinegar Salad Dressing: 1/2 tsp ground pepper
  • Balsamic Vinaigrette: 1/4 c aged balsamic vinegar
  • Balsamic Vinaigrette: 1/4 c extra virgin olive oil
  • Balsamic Vinaigrette: 2 TBSP honey (optional)
  • Balsamic Vinaigrette: 2 tsp Dijon mustard
  • Balsamic Vinaigrette: 1/2 tsp dried thyme
  • Balsamic Vinaigrette: 1 clove garlic, finely minced
  • Balsamic Vinaigrette: 1/2 tsp sea salt
  • Balsamic Vinaigrette: 1/2 tsp ground pepper
Directions
  1. Apple Cider Vinegar Salad Dressing: Whisk together all the ingredients and then pour into a mason jar.
  2. Apple Cider Vinegar Salad Dressing: Store in refrigerator.
  3. Apple Cider Vinegar Salad Dressing: Bring to room temperature before serving as the olive oil will likely solidify in the fridge. Shake well before serving.
  4. Balsamic Vinaigrette: Put the balsamic vinegar, olive oil, honey, Dijon mustard, dried thyme, and minced garlic clove in a jar. Season with salt and pepper.
  5. Balsamic Vinaigrette: Place the lid on the jar and shake vigorously to combine. Once smooth, taste and add more salt or pepper, if desired.
  6. Balsamic Vinaigrette: Store in refrigerator.
  7. Balsamic Vinaigrette: Bring to room temperature before serving as the olive oil will likely solidify in the fridge. Shake well before serving.
