Berry-Licious Chia Pudding

Chia seeds are so much more than just potential hair for a retro terracotta ‘Ch-Ch-Ch-Chia® Pet’ (you’re welcome for that delightful little earworm!). When our berries are whipped up in a blender with coconut milk and healthy fiber filled chia seeds and left to chill, magic happens.
This vibrantly colored pudding provides a tasty dessert or snack loaded up with plant-based protein from the chia seeds. As well, when looking to add more colorful fruits and veggies to your meals and snacks, berries pack not only a valuable nutritional punch, but offer a lovely treat to satisfy one’s sweet tooth. This recipe would make a delightful breakfast if you want to whip it up the night before and portion it into mason jars for a quick treat on the go.

Serves: 2-4 (makes 2 cups)

Ingredients
  • 2 c Crabtree Farms' blueberries, blackberries or a combination of both
  • 2/3 c full-fat canned coconut milk, whisked thoroughly before measuring
  • 3 TBSP chia seeds
  • 1 to 2 TBSP honey (Try maple syrup or small number of stevia drops to make this recipe vegan.)
  • 1 TBSP lime or lemon juice
  • 1/2 tsp vanilla, almond or lemon extract
  • 1/4 c fresh berries, for garnish (optimal)
  • Finely grated lime or lemon zest for garnish (optional)
Directions
  1. Combine the fruit, coconut milk, honey (to taste), lime or lemon juice, and extract in a blender. Blend for 1 to 2 minutes to form a smooth consistency.
  2. Now for your personal preference to come into play. You can blend everything except the seeds and then stir in the chia seeds whole before chilling to create a texture that is similar to tapioca pudding. The other option is to blend everything including the chia seeds instead of adding the chia seeds after blending. This second option creates a smoother pudding.
  3. Divide the pudding among individual cups or transfer to a large container. Cover and refrigerate until cold and set (about 2 hours).
  4. Garnish with lime or lemon zest and additional berries (all optional). Serve chilled.
