Fig & Greek Yogurt Smoothie

It’s finally fig season, and these fleeting sweet treats make for quite a wonderful snack eaten right out of their container. Yet, if you end up with any left over, consider this smoothie recipe as a way to get in some additional protein and fiber. Delightful for breakfast, as a snack, or for dessert.

Quick tip for using freshly picked figs at a later date:

  • Place figs on a sheet pan lined with parchment paper and put them in the freezer.
  • Once frozen, place them in a well-sealed plastic bag and pop’em back into the freezer until needed.

Ingredients
  • 1 c plain or vanilla Greek yogurt
  • 1 frozen banana
  • 8 whole fresh or frozen figs, stems removed
  • ½ c nut or soy milk (add a bit more if your smoothie is too thick for your taste)
  • 1 TBSP chia seeds
  • 1-2 tsp of honey or 4-8 drops liquid stevia (optional)
Directions
  1. Place ingredients in a blender and blend until smooth.
