Wilted Arugula

While arugula makes a delightful salad or sandwich addition, we thought you might enjoy a cooked alternative. To that end, we offer a recipe that wilts the peppery taste of arugula.

  • 2 tsp extra-virgin olive oil
  • 3 garlic cloves, thinly sliced
  • 3½ to 4 c loosely packed arugula, rinsed and drained
  • ½ TBSP balsamic vinegar
  • ⅛ tsp kosher salt, to taste
  • pepper, to taste
  1. Heat oil in a large skillet over medium heat.
  2. Cook garlic, stirring constantly, until fragrant but not browned, 2 to 3 mins.
  3. Add arugula and stir constantly until slightly wilted, 1 to 2 mins.
  4. Add vinegar and stir until most of the vinegar has evaporated, about 1 min.
  5. Salt and pepper to taste. Serve while hot.
